Ah yes, it is that time of year again where the snow is falling, the temperature is dropping, and we're up to our eyeballs in holiday shopping. One good thing about the holidays though are the array of party opportunities. Be it with family or friends, our schedule fills up with many chances to get together with loved ones and exchange hugs, gifts, and food.
Students usually don't have the means to be able to create the complicated kitchen treats because of…well lack of an oven or gourmet kitchen utensils. Below are some recipes that you can make easily without them. They are just as yummy as anything that comes out of the oven, but simple to make. So instead of being the one who brings the soda or paper plates this year, you can actually contribute something festive and delicious. Tummies everywhere will thank you, and they won't even know you "cheated". Holiday baking without the baking; you can't lose!
Holiday Haystacks
In a large microwave safe bowl - microwave 2 cups of Peanut Butter, 1 Package of Chocolate Chips, 1 Package of Butterscotch Chips. Do this 30 seconds at a time and stir well each time until melted and smooth - do not overcook. When melted, stir in 1 teaspoon of canola or peanut oil. Stir in 2 or more packages of crunchy lo-mein noodles (potato sticks can work well too) so they are coated and take up more of the bowl than the chocolate mixture. Drop spoonfuls of this onto wax paper and let them cool. Refrigerate if you'd like to make this faster. Enjoy!
Cranberry Jell-O Pie
In a microwave safe bowl, heat 1 cup of cranberry juice (45 seconds or so). Remove from the microwave and add 1 package of orange, strawberry, or cranberry Jell-O. In a separate bowl, beat 1 can of cranberry sauce with a wisk or handmixer for a minute then add the Jell-O mixture to it. Stir well. Let this cool down. Once cooled, fold in a container of Cool Whip and spoon into a pre-made graham cracker pie shell. Chill.
Chocolate Delight Pie
Stir two cups of cold milk, 2 packages of instant chocolate pudding, 2 cups of Cool Whip, 1 Cup of Peanuts, 1 Cup of Chocolate Chips, and 1 cup of Mini Marshmallows together. Spoon into a pre-made graham cracker pie shell and chill.
Tutti-Fruity Salad
In a bowl, mix 2 squares of cream cheese, 1 small can of sweetened condensed milk (I use Lechera in the Spanish Aisle), 2 Small cans of Fruit Cocktail (drained), 2 Sliced Bananas, ½ chopped cantaloupe. Chill.
Easy Chocolate Rice-Crispy Treats
In a microwave safe bowl, heat up a cup chocolate chips and 1 package white chocolate chips. Check and stir every 30 seconds and do not overcook. In another bowl, empty a box of Rice Crispies. Once the chocolate is melted pour it over the cereal and stir well. Add 1 container of Marshmallow Fluff. Press into a pan and let cool well before cutting into squares.
